Apparently I was not the only one feeling punky today. (punky = a word from my Dad’s generation meaning poorly not like I spiked my orange hair.) My husband, Mr. Neat and Orderly (henceforth known as Mr. No, which is kinda funny too if you know him) came home from work today feeling punky too. Apparently a warm bowl of vegetarian posole is just the thing for the kind of punky he was feeling, even if he is a meat eater. And if you put cheese and fresh onions on it for him, it makes you the prettiest wife. Or maybe he just had a fever.

I needed something to chase away that “I feel like I’m coming down with something” feeling today, so I made a

big pot of vegtarian posole. It’s a little spicy so it warms you up.

I first had this at Big Sky Cafe in San Luis Obispo. I make it to my own tastes. If you want to try it, this is how I did it.
1 onion diced
2 cloves garlic diced
1 tblspn olive oil
1 28 oz. can organic diced tomatoes (swirled in the food processor or blender if you don’t want tomato chunks)
2 of those cans of water
1 cup tomato puree
1 can tomato paste
2 28 oz cans of Hominy
32 oz box of Trader Joe’s organic vegetable broth
2 tsp cumin
1 tsp oregano
2 tsp ground New Mexico Chile
1 tsp ground dried jalepeno chile
1 bay leaf
Corn bread
Fried egg
Toasted pumpkin seeds
Cook the onion and garlic in the olive oil (I like to cook my onion doner than many people)
Put that in a pot with everything else, bring to a boil, turn down and simmer for 15 mins
Things to consider:
- Your taste
- Some people like more cumin, I think a little goes a long way
- What ratio of hominy to broth you want, especially if you are going to be putting the cornbread in, you may want less hominy. I swear I think that hominy swells up in the soup too.
- I would have used some chiles in adobo sauce (1 or 2) instead of the chili powders I used, but I used what I had on hand.
- I probably could have just used one more can of tomatoes but I had already put in the broth and water and needed more thickness and tomato flavor so I added the puree and paste.
- Next time I will lessen the hominy and try some green beans to get less carbs and more green veggies into it.
So there you have it, a warm soupy spicy warm you up comfort food breakfast.

- brassica among the garlic
I love volunteers. I think they make gardening more interesting. They seem determined to grow where they choose in current conditions despite my best laid plans. This is a brassica of unknown origin among my garlic. Isn’t she pretty?
